Beyond the quintessential summer brews such as the Pilsner and the Weissbier, Germany has another lesser known brew that offers a more delicate taste of summer. The name of this rare specialty brew is Kölsch, a name derived from the city in which it is traditionally brewed, the city of Cologne (“Köln” in German).
Kölsch is a traditional German ale considered to be one of the palest German beers made. Kölsch is Germany’s only true all barley pale ale made from its own special yeast and pale malt. Unlike your typical ale, Kölsch is produced through a cooler fermentation followed by a period of aging near the freezing point (i.e. “lagering”) that mellows the brew, making it into the delicate and less aggressively bitter beer it is.
With its characteristic slightly fruity flavor, delicate hop and malt, Kölsch’s taste profile may seem simple at first, but with a few more gulps the subtle complexities of this beer are revealed, making for an extraordinarily pleasant drinking experience. Despite its appeal, Kölsch is often one of the harder German brews to find in the U.S., often residing in specialty beer stores. This may be due in part to the difficulty involved in brewing this unique beer. Since there are no powerful flavors that can hide any flaws in the beer, the brewer of Kölsch must be of the most skilled brewing magicians.
